@evnhope I love it scrambled with mushrooms, spinach, tomato and very hot Chinese chilli oil! Add some homemade vegan bread lightly toasted with an on the side. It’s my default breakfast.
@evnhope I've found for me as long as I keep the fats lower, legumes don't bother my digestion. Not sure if you've experimented with that or not, but it helped me get more legumes in my diet which made getting more protein easier.
That said, I love making "bacon" tempeh, plenty of good recipes out there, or if you're lazy, just cut into thin strips and coat in bbq sauce of your choice, put it on a sheet pan and roast it in the oven, around 350f for ~20mins depending on how thin you made them. Then you've got a high protein topping that goes with anything.
@evnhope my favorite ways are in a quesadilla & in a crunchy salad with corn, cherry tomatoes, avocado etc. I’m lazy so I only buy the light life pre marinated tempeh.. it’s soo good
